Halloween Pinwheel Sugar Cookies

  • 2 cups All-Purpose Flour (or gluten-free blend)
  • 1 cup Unsalted Butter (or plant-based butter for vegan option)
  • 1 cup Granulated Sugar
  • 1/2 cup Powdered Sugar
  • 1 large Egg (or flaxseed egg: 1 tablespoon ground flaxseed + 2.5 tablespoons water)
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 3 tablespoons Gel Food Coloring

Instructions

  1. Gather and measure all your ingredients for an easier baking process.
  2. In a bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large bowl, beat the unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add the egg or flaxseed egg to the mixture and mix until thoroughly combined.
  5. Gradually add the dry mixture to the wet mixture and mix carefully.
  6. Divide the dough into parts for each color and knead the gel food coloring into each portion.
  7. Roll out each color of dough on a floured surface to about 1/4 inch thick.
  8. Stack the rolled-out colors on top of each other and roll tightly into a log.
  9. Wrap the log in plastic wrap and chill it in the refrigerator for at least 1 hour.
  10. Preheat your oven to 350°F (175°C).
  11. Slice the chilled log into rounds, about 1/4 inch thick.
  12. Place the sliced cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  13. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
