Orange Cranberry Bread

A delightful treat combining sweet-tart cranberries and zesty orange, perfect for breakfast, snacks, or dessert.

  • 2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup powdered sugar
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. Mix together flour, sugar, baking powder, and salt in a large bowl.
  4. In another bowl, whisk together orange juice, vegetable oil, eggs, vanilla extract, and orange zest.
  5. Combine the wet and dry mixtures without over-mixing.
  6. Fold in the cranberries gently.
  7. Pour the batter into the prepared pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Mix powdered sugar with 2 tablespoons of orange juice to make the glaze.
  11. Drizzle the glaze over the cooled bread.
  12. Allow the bread to cool completely before slicing.
